Asian Spinach Salad with Avocado & Orange

 

A great way to use those delicious avocados in Mexico!

  • 1 bunch or bag of baby spinach leaves
  • 1 avocado, cut into wedges
  • 1 navel orange
  • 2 tbls. shallots, finely chopped
  • 2 tbls. seasoned rice vinegar
  • 2 tsp. ginger, minced
  • 1 tbls. vegetable oil
  • 1/4 tsp. sesame oil

Whisk together shallots, vinegar, ginger, vegetable oil, & sesame oil.  Season with salt & pepper to taste.  Set aside.

Peel and remove white pith from orange.  Cut into rounds, then cut rounds in half.  Add spinach to dressing & coat.  Add avocado & oranges and toss gently.
