Penny's Chicken Casserole

Flower Mound Girls Club:  Pat, Penny, Tami, Bonnie & EmilyMy Flower Mound Girls Club gets together every year at Christmas to celebrate our friendship.  Penny came up with this dish and we love it!  It would also be a great way to use left over turkey.

1 chicken/turkey cooked and deboned (or 4 chicken breasts)

1 package spaghetti cooked in the chicken broth drained and set aside

1 onion, chopped

1/2 green pepper, chopped

2 ribs of celery, chopped

1 can cream of mushroom soup

2 cans cream of chicken soup

1/2 stick butter

1 can diced tomatoes

1 cup or more cheddar cheese

Salt & pepper to taste

 

Sauté onion, pepper & celery in 1/2 stick of butter.  Mix together chopped chicken, onion, pepper, celery, tomatoes, soup and spaghetti with some of the chicken broth.  Add salt & pepper to taste.

 

Spoon into buttered casserole, sprinkle grated cheddar cheese on top.  Bake 20-30 minutes until cheese melts @ 350°.
